Salsa Lentils and Rice Bowl

I love movie theater popcorn!

Sure, it’s like a heart attack in a bag, but that didn’t stop me from eating half a bag yesterday afternoon. Chandler and I caught an early afternoon showing of 42 and I *loved* it.

I always go to afternoon movies because I’m way too cheap to spring the extra few dollars on the nighttime prices.

However, after eating that buttery goodness, I woke up  wanting something light and fresh. Lentils to the rescue!

Apple Walnut {Breakfast} Quinoa

When it comes to food, I’m a little finicky. I won’t touch oatmeal, cheese, yogurt, or sandwiches with a ten-foot pole. I was pretty much a mother’s worst nightmare when it came to packing school lunches way back when. 

Quinoa though? Pile it in my bowl, especially if it’s Apple Walnut {Breakfast} Quinoa!

This stuff is my new addiction.

A warm, creamy bowl of tart apples, sweet, quinoa, and crunchy walnuts is a great way to kick off your day! High in fiber, protein, and flavor, this breakfast will fill you up and keep you satisfied until lunch. It doesn’t hurt that it takes 12 minutes from start to finish either. 

With that, I’m off to read Fly Away by Kristen Hannah! It just came out and I can’t think of a better way to spend a day off. Have a great one!
